Brewing Method Suggestion

There are 3 typical brewing method. Cold brew, warm brew and hot brew. The reason is quiet simple because of the catechins. The taste of catechins is bitter, and hot water will make the bitter taste more stronger. The fermentation degree refers to the percentage decrease in catechin in tea. We can choose different ways to brew our tea and discover the different flavor of tea.
Cold Brew 4°C:
Method:
Add tea leaves with cold water into a big bottle, and put it into for about 6~8 hours.
Suitable tea:
Green tea, some low fermentation celadon tea like High Mountain Oolong Tea(including Sunlingshi Oolong / Sun Link Sea High Mountain Oolong Tea, FuShouShan High Mountain Oolong and Alishan High Mountain Oolong) , or honey flavor oolong tea like Oriental Beauty Oolong Tea, and some black tea with sweet flavor like Honey flavor Black tea.
Warm Brew 80°C:
Method:
Cool down the boiling water to about 80°C put it into the tea pot with tea leaves for about 30 secs to 1 mins. (the time is depends on the tea and the flavor of tea you like)
Suitable tea:
Green tea, some low fermentation celadon tea like High Mountain Oolong Tea(including Sunlingshi Oolong / Sun Link Sea High Mountain Oolong Tea, FuShouShan High Mountain Oolong and Alishan High Mountain Oolong) , or honey flavor oolong tea like Oriental Beauty Oolong Tea, and some black tea with sweet flavor like Honey flavor Black tea.
Hot Brew 100°C:
Method:
Put the boiling water to about 80°C into the tea pot with tea leaves for about 10 secs to 1 mins. (the time is depends on the tea and the flavor of tea you like)
Suitable tea:
Some middle to high fermentation celadon tea like Dong-Ding Oolong Tea, and all the Black Tea.
