Celadon Tea(青茶), most people may called it Oolong Tea (烏龍茶) is a classification of partial fermentation tea. The fermentation degree is between 10%~80%. Depends on the fermentation degree, Some Celadon Tea/Oolong Tea tasted like green tea(ex. High Mountain Oolong Tea). Some will tasted like Black Tea(ex. Oriental Beauty Oolong Tea). And Taiwan has many different type of Oolong Tea.
For different fermentation degree, we also classified it into 3 level:
Light Fermentation: High Mountain Oolong Tea ex. Sunlingshi Oolong / Sun Link Sea High Mountain Oolong Tea, FuShouShan High Mountain Oolong and Alishan High Mountain Oolong are very famous and popular in Taiwan.#sunlingshi #sunLinksea #FuShouShan #Alishan
Fragrance: floral, green fruit fragrance rises Taste: refreshing, smooth and sweet, sweet Note: When the altitude is higher, the tea soup is rich in pectin, and the higher the amino acid, the tea is sweeter and mellow.
Medium Fermentation: ex. Dong-Ding Oolong
Fragrance: Dried fruit, apple, caramel, tangy.
Taste: Smooth and round, full-bodied and mellow.
Heavy Fermentation: ex. Oriental Beauty Oolong Tea and Gui-Fei Oolong Tea
Fragrance: floral and fruity, ripe fruit, honey, caramel and tangy. Taste: sweet and round, sweet and mellow.

The step of making black tea is as follow:
Withering: We use withering method for drying tea leaves.
Rolling: It is the step to make the tea leave's into different shape like twist shape or ball shape. There are many rolling ways like straight-flat rolling(線型壓揉), needle rolling(針狀滾揉), circular rolling(螺旋揉), round rolling(圓滾揉),ball rolling(球狀揉).
Fixation: It is the most important step to avoid fermentation tea leaves. It has different ways like stir fixation(炒青), steam fixation(蒸青), hot air fixation(烘青) and sun fixation(曬青).
Fermentation: The fermentation of tea is an "oxidation" process driven by "oxidase". The fermentation degree refers to the percentage decrease in catechin in tea.
Drying: It is the step for preserving the tea leaves. And there are also have many different drying methods like stir drying(炒乾), hot air drying(烘乾) and sun drying(曬乾).
