Introduction of 6 classification of teas:
There is many classification of tea in the world and also in Taiwan tea. Here we choose the typical classification which is base on the production technique to classify different type of tea.

Let's get start to know the basic production of tea.
There are 6 classification of teas: green tea, yellow tea, white tea, celadon tea(blue tea or oolong tea), black tea and dark tea. It is classify by the degree of fermentation and the color of dry tea.

What determine the flavor of the tea?
Do you know that the same tea plant variety leaves can make many type of tea?
Tea is just like coffee and wine. the variety of the tea leaves, the weather, and the production method will determine the flavor of the tea. It is just the like the proverb said, everything is heaven-earth-mankind.
Charming tea flavor of the Taiwan tea.
Taiwan tea will not use flowers and fruits to make the tea flavor different. However, some of Taiwan tea will have honey, milk or Cinnamon flavor. It is because we have Taiwan special variety of tea leaves and we inherited the Chinese tea culture for thousands of years.
Fermentation
Fermentation, an important step to determine the flavor of the tea.
The important step of tea making is fermentation. There are four types of fermentation: non-fermented, partially fermented, completely fermented and post fermented.
The non-fermented tea includes green tea and yellow tea. The partially fermented tea includes white tea and celadon tea(The Oolong tea is a kind of celadon tea. Base on different level's fermentation, some Oolong tea will taste like roasted, some will not). The completely fermented includes black tea. The completely fermented includes dark tea, Puerh tea is the dark tea.
